Strawberry & Basil Gin Sour

Make these when citrus, strawberries and basil are either growing in the garden or are cheap and looking fabulous at the markets. Its a perfect spring through to summer cocktail.

TIPS – Always use freshly squeezed lemon and lime juice. You can also make this into a mocktail for the little people by omitting the gin and topping up with soda water.

Ingredients

Sour Mix

1 cup sugar

1 cup water

1 cup freshly squeezed lemon juice

1 cup freshly squeezed lime juice

Strawberry Syrup

1 punnet strawberries

1 cup sugar

1 cup water

Per drink:

2 strawberries halved

2 large basil leaves

1 shot Sour mix

1/2 shot Strawberry Syrup

1 1/2 shots pink gin

1 1/2 shots tonic water

1/4 cup ice

strawberry and basil leaves, to garnish

Method

Sour Mix

  1. Place the sugar and water into a small saucepan and place over high heat.
  2. Cook until the sugar dissolves, then remove from the heat.
  3. Stir through the juices and pour into a jug. Refrigerate until cold or overnight.

Strawberry Syrup

  1. Place the sugar and water into a small saucepan and place over high heat.

  3. Take off the heat and pour into a jug. Refrigerate until cold or overnight.
  4. Strain to remove the pieces of strawberries,.

  1. Place the strawberries and basil leaves into a cocktail shaker. Pour in the gin, strawberry syrup and sour mix, then muddle to break up the strawberries and basil.
  2. Pour in the tonic water.
  3. Tip in the ice, place over the shaker lid and shake until very cold.
  4. Strain into a cocktail glass. Top with a strawberry and basil leaf, then serve.
