With so many woks on the market, it can be confusing to decide which one to purchase. We have hand selected this Chinese wok due to its affordability, longevity and performance. It is best for quick stir-fries, noodles dishes, deep-frying and steaming and is a popular choice for professional cooks.
There are many reasons for choosing to buy a traditional carbon steel wok. Due to the nature of the metal, it is more light-weight compared to stainless steel and cast iron woks. As the material is ductile, it is able to be stretched thin, which means it heats up quickly and evenly. The high heat achieved in this wok will also allow you to produce more authentic tasting dishes which have that characteristic smokey flavour that can only be imparted from a carbon steel wok.
At 38cm, this wok is large enough to cook big dishes for a hungry family or crowd.
Before use, it is important to season the surface properly. Once you purchase this wok, you will be emailed a set of instructions, with photos, on how to do this. The whole process only takes about 45 minutes, during which your wok will turn from silver to a shiny blue or brown/black hue. This non-stick surface, known as the ‘patina’ is will ensure fabulous stir-frying for many years to come. Nurturing and maintaining this patina is essential to using a carbon steel wok which is why there are plenty of tips included in the instructions.
PLEASE NOTE:
- Due to the round base shape, this wok is only suitable for cooking on gas burners, preferably with a wok frame fitted.
- Every carbon steel wok comes factory-coated with a non-toxic, anti-rust oil. This must be thoroughly scrubbed with warm mild detergent and a scourer before seasoning and using to cook food.
- The carbon steel surface will form areas of rust if not dried thoroughly between use. How to care for your wok in between usage, will be included in your emailed set of instructions.
- As this wok is hand-made, your exact wok may differ slightly from the wok pictured. There may be variations in the shade of the bamboo handle or in the metal.
