Cranberry, Pistachio, Raspberry & White Chocolate Loaf

A delicious, quick to make loaf, best served warm, from the oven.



INGREDIENTS

3/4 cup sugar

2 eggs

125g butter

3/4 cup ground almonds

3/4 cup plain flour

1 tsp vanilla extract

1/2 cup each of cranberries, pistachios, white chocolate chips

1 punnet fresh raspberries or 150g frozen


METHOD

  1. Place sugar, eggs, butter, almonds, flour and vanilla in a food processor and blitz for a minute or two until well combined.
  2. Transfer to a bowl and fold through the remainder of the ingredients.
  3. Pour into a lined loaf tin and bake 160 degrees Celsius, for about an hour or until a skewer comes out clean.
